Dear Madam, Sir, . I would appreciate your consideration for this job. To tell you a little about my cooking style: My passion is the ‘cuisine of the sun’. While my base is traditional and Mediterranean French cuisine, I am inspired by adapting this to the taste of the geographic locality of where I am cooking. I have a strong interest in local cuisine and I make a concerted effort to source produce from the local markets: “European culture with a local touch”. As Executive Chef, I am responsible for all development and training of my team. One of my primary aims is to develop the creativity of each member of my team. I encourage them to read cook books of the great chefs and I challenge them to come up with new ideas. We then discuss these as an entire team and create new dishes accordingly.
